Chick-fil-A Style Carrot and Raisin Salad

Core memory: going shopping with my mama in middle and high school and always stopping by Chick-fil-A for their carrot and raisin salad! We loved it so much! It was one of those little traditions that just stuck. So you can imagine how disappointed we both were when they removed it from the menu after being a staple for 4 decades.

Fast forward to today, and I make my own version at home, this time with simple ingredients, no refined sugar, and plant-based. It’s incredibly easy, naturally sweet, and even more delicious than I remember!

Enjoy it as a side with BBQ jackfruit, on its own for a midday snack, or however you like. I hope it becomes one of your favorites too. <3

Carrot and Raisin Salad

Ingredients:

  • 3 cups carrot, grated
  • 1-2 tbsp maple syrup (optional: depends on the sweetness of your pineapple)
  • 1/2 cup grated pineapple with juice
  • 1/4 cup vegan mayonnaise*
  • 1/4 cup raisins
  • 1/4 tsp salt

Directions:

  1. Mix all ingredients together, taste test, adjust if needed and enjoy!

*Note: If you have the time or desire, you can make your own vegan mayo. One of my favorite recipes is this one.
