Roasted Cabbage with Raisin and Caper Vinaigrette
This roasted cabbage with raisin and caper vinaigrette has quickly become a staple in my kitchen—rich, tangy, and unexpectedly irresistible. Who knew humble cabbage could transform into something so bold, elegant, and exciting?
Roasted Cabbage with Raisin and Caper Vinaigrette
Ingredients:
- 1 head of savory or green cabbage
Vinaigrette
- 1/4 cup raisins
- 1/4 cup hemp seeds
- 2 tbsp capers
- 1 tbsp maple syrup
- 2 tbsp olive oil
- 4-5 tbsp water
Directions:
- Preheat oven to 400º. Line baking sheet with parchment paper and set aside.
- Cut cabbage into 2-3″ thick wedges. Place in steamer basket and steam for 10-12 minutes.
- Place cabbage wedges on baking sheet and lightly brush with olive oil.
- Bake for 15 minutes until desired texture and look.
- Blend vinaigrette ingredients while the cabbage is cooking.
- Once the cabbage is finished, drizzle vinaigrette on top and enjoy! Option to place on top a bed of mashed potatoes and added roasted asparagus (as shown in the picture).
