Simple Smashed Pea Toast

Move over, avocado toast, there’s a new lunch favorite in town: Smashed Pea Toast! It’s quick, simple, and just as satisfying, without the constant guessing game of avocado ripeness. I like to use frozen petite peas. They’re always on hand, cook quickly, delicious, and ready to go whenever the craving strikes.

Smashed Pea Toast

Ingredients:

  • 1 cup frozen petite peas
  • 2 tsp tahini
  • squeeze of 1/2 a lemon (around 1 tsp or more depending on preference)
  • salt and pepper to taste
  • bread of choice (I love Pacha)

Directions:

  1. Cook frozen peas according to package instructions.
  2. While cooking, prepare bread. I enjoy mine lightly toasted.
  3. Once peas are done, add in tahini, lemon juice, salt/pepper and mash together with a fork.
  4. Spoon mixture on top of bread* and enjoy!

Other options: I’ve also used a dollop of vegan mayo in the place of tahini.
