Oil-free Vegan Greek Pasta Salad
This extremely simple oil-free Greek pasta salad is a fan favorite in my house. It’s perfect to make in large batches for snacks or a simple lunch or dinner option. I also love bringing it on road trips.
Oil-free Vegan Greek Pasta Salad
Ingredients:
- 3 cups gluten-free pasta of choice
- 1/2 cup pitted olives*, chopped
- 1/2 cup cucumber, diced
- 1 can artichoke hearts, chopped
- 1/2 cup red onion, diced
- 1/2 cup tomatoes, chopped
- 1 tsp dried oregano
- 1 tsp dried dill
- 1 tbsp apple cider vinegar
- 1 tsp lemon juice
- vegan Feta cheese (optional)
- handful of parsley, chopped (optional)
- salt and pepper to taste
Directions:
- Cook pasta according to package instructions.
- While the pasta is cooking, prepare all your veggies.
- In a small bowl add apple cider vinegar, dill, oregano, and lemon juice. Whisk until mixed.
- When pasta is ready, drain and rise. Add to large bowl and drizzle dressing on top. Crumble in the feta cheese and toss well. Enjoy!
*Note: I used kalamata olives but you can use whatever is your favorite.
