Tofu Ricotta

This Tofu Ricotta recipe is one of the easiest one’s on The Refined Hippie. Simply add all the ingredients to a food processor and you’re done. I love using the ricotta dolloped throughout my veggie lasagna which is a family favorite.

Tofu Ricotta

Ingredients:

  • 1 package organic tofu*
  • 1 tbsp lemon juice
  • 3 tbsp nutritional yeast
  • 1 tsp salt
  • 1.5 tsp white miso paste
  • 1/2 tsp garlic powder
  • 1-2 tbsp water

Directions:

  1. Combine all ingredients in a food processor and process until desired consistency. Voila. Use the ricotta in lasagna, on top of pasta, and more!

*Note: I love Trader Joe’s Organic Sprouted Tofu, but any firm tofu will work.
